A ham and cheese omelet is on every menu in every breakfast spot in the United States. It is easy to understand why: A ham and cheese omelet is comfort food, requires no fancy ingredients, and is simple to prepare. Just as important, it is predictable. One has to be in a very special mood to appreciate a surprise in the morning, but this fancy version of a familiar comfort is one of the exceptions.
Parmesan tuiles are a lovely garnish for savory omelets (see recipe note). In their place, a few curls of shaved Parmesan will work very well.
