I love your show and just listened to your Mother’s Day themed podcast. I was concerned when I heard you and the crew highlighting the flavors and quality that fat in meat creates when grilled. You even mentioned coming up with ways to add fat to increase the amount of drippings to create the flavored smoke that results. This is one of the factors shown to increase cancer risk. HCAs and PAHs have been found to be mutagenic—that is, they cause changes in DNA that may increase the risk of cancer. HCAs are formed when amino acids (the building blocks of proteins), sugars, and creatine (a substance found in muscle) react at high temperatures. PAHs are formed when fat and juices from meat grilled directly over an open fire drip onto the fire, causing flames. These flames contain PAHs that then adhere to the surface of the meat.
I am all for enjoying life and not overthinking our food, but I was just concerned that listeners might try harder to achieve this fatty smoke and could lead to increased risk of cancer.
