Almost-Fat-Free Dieter’s Lemony Dressing

lemon juice
fresh, to taste

teaspoon
sugar

tablespoon
olive oil
extra virgin

teaspoons
digon mustard
salt
to taste
pepper
freshly ground, to taste

clove
garlic
small, smashed and peeled
Instructions
Combine all of the ingredients in a bowl and mix until well blended. Adjust the seasoning, transfer to a jar if desired, cover, and refrigerate.
Whisk or shake before serving. ( You need not remove and discard the garlic, but it is used only to flavor the dressing: it should not be consumed.)
