Corn Salad
Ingredients

corn
fresh kernels, about 12 ears

tomato
1/2 inch diced

cup
red onion
diced small
1/2
cup
cilantro
fresh, chopped
1/2
cup
vinegar
red wine
1/4
cup
olive oil
extra virgin
salt
to taste
pepper
to taste
Instructions
Cut kernels off the cob and place in a large mixing bowl. Add the diced tomato, red onion, cilantro and mix well. Add the vinegar, oil, , salt and pepper and let sit for 5-7 minutes. Taste and adjust seasonings with salt and pepper.
