This tip from Fine Cooking magazine contributor Maria Speck is genius. Maria wondered what would happen if you soaked polenta (cornmeal) overnight in some boiling water, and cooked it the next day. If it works for oatmeal, she thought, why wouldn’t it work for polenta? Sure enough, she tried it and realized she could then make polenta in under 15 minutes!
Want real polenta for dinner? No problem. Pour boiling water on the cornmeal as you leave the house in the morning, put the lid on and let it sit there off the heat all day. The add-ins and stirring will take you less than 15 minutes when you get home. Maria, you are now a friend to worker bee polenta-lovers everywhere.
