We thank our talented colleagues at Cooks Illustrated magazine for doing a taste-test of balsamic vinegars. We especially agree with one of their top choices, based on flavor and price. We, too, like Colavita Balsamic Vinegar of Modena, around $2.99 per bottle. As the magazine noted, it might seem sharp tasted on its own, but once blended with your favorite oil, it’s nicely balanced. Colavita is available in most major supermarkets.
