Thanks to our colleagues at Fine Cooking® Magazine who reminded us in their latest issue that the mangos we love are called “Champagne Mangos,” and are only available in the summer. The exterior is yellow, and the insides are like velvet without that stringy, sharp taste. If you see some, buy them!
