Cheater Profiteroles from Refrigerator Biscuit Dough

From Faith: It all started because Chris Prosperi said he wanted to use his George Forman grill to toast very thick slabs of bread, which could then become fast pizzas. That made Alex Province say he wanted to eat leftover refrigerator biscuits slathered with peanut butter and Nutella. I liked both these ideas, and then it hit me… why not use leftover refrigerator biscuits to make cheater “profiteroles” without all the work? Here’s how it works:

  1. Cut the cooked biscuits in half carefully and pull out the dough from the center of each one, leaving you with biscuit “shells.”
  2. Brush the inside and outside of each shell with melted butter and sprinkle all over with a mixture of cinnamon and sugar. Place the shells, hollow side up, on a baking sheet, and bake in a 350 degree oven until the biscuits become firm and caramelized from the heat. (Watch them carefully.)
  3. Place a scoop of vanilla (or your favorite flavor) ice cream in each “cup” and serve warm, with or without drizzled dark chocolate. Sprinkle the chocolate drizzle on each plate with a few grains of sea salt. Feel free to add toasted sliced almonds or shredded coconut on top.
