Fish: 54 Seafood Feasts

fishWhile a plain piece of grilled fish can be great, Cree LeFavour offers a wake-up call by creating a book of fish-centered meals with global flavors. Along with fish, she features some terrific sides, including one of our favorite ways to have fresh corn — mixed with spice. Sure, we encourage you to enjoy those first ears of fresh corn just as they are, pure and summery. After maybe three meals of plain corn, we hope you’ll try Chile Corn with coriander, cumin and olive oil. Amazingly, this works with frozen corn in the winter, too, so buy extra cobs and freeze the kernels. Anyone can make this. Cut the kernels off the cob, and some olive oil and spices to a skillet. That’s it!
