Faith enjoys meat and vegetables, so she’s a fan of what first amused her — so-called Paleo or “caveman” eating. It’s just a marketing term for eating clean food, going light on grains, dairy and sweeteners. Weight-lifters love the diet, as do people who are watching their calories for a variety of reasons. Some folks just feel better eating Paleo. But no matter how you eat, Faith says you might want to check out the satisfying Paleo lasagna created by Gordon Chalue for Shoreline Prime Meats & Deli. He says he found the recipe online, calling for zucchini slices in place of flour noodles. Then he adapted the recipe. His dish includes a bolognese meat sauce, and freshly ground almond meal as the topping and between the layers, in place of cheese. He claims he uses a small amount of olive oil. After our Food Schmooze report, he’s been selling dozens and dozens of trays of it. In fact, one couple traveled to his store from Long Island to taste it!
