It’s grilling season! That means it’s time to season your grill. Fire up the grill to burn off last year’s grime, then use Chris Prosperi’s trick: Turn the grill off. Mix together some water and kosher salt in a bowl, soak a rag in the salt water mixture, and using tongs, rub the hot grates with the salted rag. Your grill will be perfectly seasoned and you’re ready to cook.

Hi Susan. Thanks for listening! I asked Chris about this: He told me that he does do this after every time he grills–but he makes it easy. He keeps the can with a salt water mixture right by the grill. He replenishes the salt water as needed, grabs the rag, and goes over the grates a few times as part of his clean-up routine.
