Faith’s Watermelon Tequila Cocktail Punch

We say make wildly delicious and refreshing watermelon cocktails the easy way—by the pitcher. In this batch, Faith combines chopped watermelon with Rose’s Lime Juice and tequila, dressing up each glass with a sprig of fresh mint.

A suggestion from our chief cocktail contributor, Anthony DeSerio, made this drink even better: Have fun with the presentation. Hollow out the watermelon and use it as a vessel and serve it punch-style. (Online, we've seen this called a watermelon "keg"). So fun!

Ingredients
  • 1/4 cup Rose's Lime Juice
  • 9 cups chopped seedless watermelon
  • 1/8 -1/4 cup fresh lime juice
  • 1-1/4 cups 100% Agave Tequila
  • ice
  • Fresh mint for garnish

Instructions
  1. In a blender, purée the chopped seedless watermelon until it's smooth. Pour it through a strainer into a bowl. Press the pulp in the strainer with the back of a large spoon, extracting as much pure juice as possible. Throw the pulp away.
  2. Pour the watermelon juice into a pitcher. Add Rose's Lime Juice, half the fresh lime juice and the tequila. Stir and taste with a teaspoon. Add the rest of the fresh lime juice if you'd like it more tart, or a little more Rose's syrup if it's too tart. When it's just the right balance, pour into ice-filled glasses. For a little snazz, place a sprig of mint in each glass. Enjoy!
Recipe Notes

After following our instructions, taste and decide if you'd like to add more lime juice or lime syrup to suit your palate.
