Super-Delicious Paleo Sesame Noodles

Elana Amsterdam works hard to make her Paleo dishes clean, yet as tasty as recipes with non-paleo ingredients. In this dish she mixes together almond butter, toasted sesame oil, plum vinegar, honey and kelp noodles. You can buy these ingredients at your local health food market if your supermarket doesn’t carry them.

Ingredients
  • 1 kelp noodles (12-ounce) package
  • .25 cup roasted almond butter at room temperature
  • 1 tablespoon sesame oil toasted
  • 1 tablespoon ume plum vinegar
  • 1 tablespoon honey
  • sesame seeds for garnish

Instructions
  1. Soak the kelp noodles in a bowl of hot water for 30 minutes. Drain the noodles and rinse thoroughly.
  2. In a small bowl, whisk together the almond butter, sesame oil, vinegar, and honey. Add the noodles and toss to combine. Sprinkle with sesame seeds and serve.
