Sounds insane, though you might want to think insanely good. Brush olive oil on one side of a corn tortilla. Pop it on the grill, oil side down. As soon as it has golden brown grill marks, move it off the grill and add toppings to the grilled side—a little diced jalapeño, fresh watermelon cubes, diced avocado, fresh cilantro, shredded rotisserie chicken, crumbled Mexican cheese (or feta), diced scallions. Pile it on. Return it to the grill, close the lid for a couple of minutes and you’re done! Squeeze fresh lime juice on top before digging in. Add or subtract whatever you’d like. It’s just messy good!
