We couldn’t do a show celebrating all things breakfast without a good cuppa’ joe — er — make that a can of joe.
During a recent Food Schmooze®, senior contributor Alex Province cracked open a can of Rise, an organic, black, nitro cold brew coffee produced in Brooklyn, NY. Alex researched the coffee in a can, explained how the coffee is made, and we went about the tasting. Here are some notes and our impressions (spoiler: we loved it):

Cold brew coffee is not to be confused with iced coffee. Conventional coffee is made when hot water passes through grounds extracting certain chemical compounds. You’re getting oils, fatty acids, and acidity.
Cold brewing process means cold water passes through those grounds extracting LESS of the chemical compounds that produce warm brewed coffee’s signature bitterness and acidity. Cold brewing produces a less bitter, less acidic, smoother tasting coffee.
Rise is also nitrogen-infused, so if you’ve ever had a Guinness, you know what I’m talking about. We know, it’s fun to drink from a can, but to really appreciate this coffee, you need to pour it into a glass and watch the bubbles settle. The coffee has a beautiful foamy head, very much like a Guinness.
It’s light. It’s creamy (yes, both of those seemingly incompatible things). Refreshing (which is surprising for a coffee). It’s silky smooth with a pleasant mouthfeel. It has body, along with a slight sweetness, yet the coffee has no sugar. It’s the best kind of science at work here.
Bonus: Working on a term paper? Got sucked in to a Netflix binge watch last night? Rise has one-and-one-half the amount of caffeine as conventional coffee. If a can doesn’t get you through a sleepy morning, nothing will.
