Absurdly Easy & Good Microwave Apple Crisp

Whole baked apples are great but if you want to have a little more fun the fast and easy way, try this recipe I adapted to make a microwave apple crisp. It takes me about 10 minutes to make it. I love the crispness and sweetness of granola on top, as opposed to the slight cardboard taste I get from quick-cooking oats that somehow never cook enough. Go for the granola! — FM

Ingredients
  • 4 Granny Smith apples large, peeled, cored, and sliced
  • 1/2 cup butter melted
  • 3/4 cup brown sugar packed
  • 1 cup granola (your favorite brand)
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon allspice

Instructions
  1. Spread the apples evenly in an 8-inch square glass baking dish. A deep dish glass pie plate will also work. In a medium bowl, mix together the melted butter, brown sugar, granola, flour, cinnamon, and allspice. Sprinkle this topping evenly over the apples.
  2. Cook on full power in the microwave for 10 to 12 minutes, until apples can easily be pierced with a knife. Enjoy!

      I’d say so. Cover well and refrigerate until ready to cook.

    Oh my gosh, this was so yummy!! I made it once exactly as written and my family loved it. Then later, I scaled it down to one serving as best as I could (for just me) and it was even better! So super quick & easy… A keeper for sure in my book!
