O’Rourke’s Famous Corned Beef Hash

Brian O’Rourke is full of surprises at O’Rourke’s Diner, built in 1941 in Middletown, Connecticut. As chef and owner, Brian seems to be able to create something good out of any food items he stumbles upon in his pantries. You’ll find regular diner–style items on the menu with Brian’s original twist, including a very tasty omelette, steamed cheeseburgers, and this recipe for Brian’s noteworthy Corned Beef Hash. It’s chunky with corned beef, cooked potatoes and spiced with his magic ingredient, cajun seasoning.

Ingredients
  • 4 cups cooked corned beef finely chopped
  • 1.5 cups cooked potatoes finely chopped
  • 3 eggs
  • 1 teaspoon celery seed
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon dry mustard (preferably Coleman's)
  • .5 cup ketchup

Instructions
  1. To finely chop the corned beef and potatoes, grind them together in a food processor. Pulse until the mixture has some texture, but make sure it doesn't turn into baby food.
  2. Transfer the mixture to a bowl, add the remaining ingredients, and mix by hand until everything comes together. Form into patties, and brown on both sides in an oiled frying pan or on a griddle.
