If you’ve ever wondered what the difference between convection and conventional oven cooking is, or if your oven has a convection setting, but you’ve always been afraid to turn it on because you don’t know exactly how it works, this is for you.

Connecticut chefs Chris Prosperi from Metro Bis in Simsbury, and John Craig from Clarke Kitchen Design & Showroom in South Norwalk explain the hows and whys of using a convection oven to achieve the most even cooking possible, and they’ll demonstrate by baking a batch of Dorie Greenspan’s Christmas Spice Cookies.
