The barbecue community doesn’t call Mike Mills “The Legend” for nothing. A revered pitmaster for decades now, Mike has been inducted into the Barbecue Hall of Fame and helped create the Big Apple Barbecue Block Party in Manhattan, NY. Together with his daughter, Amy, Mike has written the aptly titled Praise the Lard: Recipes and Revelations from a Legendary Life in Barbecue. They also run the famed 17th Street Barbecue in Murphysboro, Illinois (the neighborhood barbecue spot that started it all!). This is a family for whom barbecue is religion.
Preach!
• ON-DEMAND: Listen to Faith and Mike discuss recipes in the book AND the Big Apple Barbecue Block Party happening at Madison Square Park the weekend of June 10-11. •
Praise the Lard is your barbecue bible. New to the church? Start at the beginning. Mike and Amy tell you what you need to build up your barbecue pantry and explain how to build flavor (whatever you might be grilling or smoking) by layering seasoning, smoke, and sauce.
Think of yourself as a pit boss already? Hit the recipes: ribs, brisket, chops. . .anything you might order at your neighborhood barbecue spot is in this book, including some salads and sweets you might not find at your local barbecue spot, but wish you would. Think: shortcakes, hand pies, slab pies, and a boozy bourbon cake.
