The secret to making this a low-fat dressing is using the water in place of most of the oil. Only 18 calories in one tablespoon.

Ingredients
  • 1/4 cup water
  • 3 tablespoons lemon juice fresh, to taste
  • 1/2 teaspoon sugar
  • 1 tablespoon olive oil extra virgin
  • 2 teaspoons digon mustard
  • salt to taste
  • pepper freshly ground, to taste
  • 1 clove garlic small, smashed and peeled
Servings: makes about ½ cup
Instructions
  1. Combine all of the ingredients in a bowl and mix until well blended. Adjust the seasoning, transfer to a jar if desired, cover, and refrigerate.
  2. Whisk or shake before serving. ( You need not remove and discard the garlic, but it is used only to flavor the dressing: it should not be consumed.)
