After Thanksgiving. You Deserve a Break. Microwave.

Here’s our theory—we’re willing to bet a zillion people eat out after Thanksgiving weekend…Do you have Post-Thanksgiving Exhaustion Syndrome? The Food Schmooze® gang has decided we all deserve a put-your-feet-up intermission before the next wave of holidays arrive, so here are some easy recipes we like that are made in the microwave. Please pay special attention to Faith’s favorite—Barbara Kafka’s fantastic recipe for Szechuan Green Beans.

Ingredients
  • 4 Granny Smith apples large, peeled, cored, and sliced
  • 1/2 cup butter melted
  • 3/4 cup brown sugar packed
  • 1 cup granola (your favorite brand)
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon allspice

Instructions
  1. Spread the apples evenly in an 8-inch square glass baking dish. A deep dish glass pie plate will also work. In a medium bowl, mix together the melted butter, brown sugar, granola, flour, cinnamon, and allspice. Sprinkle this topping evenly over the apples.
  2. Cook on full power in the microwave for 10 to 12 minutes, until apples can easily be pierced with a knife. Enjoy!

Ingredients
  • 6 garlic cloves smashed and peeled
  • 2 slices fresh ginger quarter-size, peeled
  • 2 scallions trimmed and cut into 2-inch lengths
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon hot red-pepper flakes
  • 1 tablespoon tamari soy
  • 1 tablespoon rice wine vinegar
  • 1 pound green beans tipped and tailed

Instructions
  1. Place garlic, ginger, and scallions in the workbowl of a food processor. Process until finely chopped. Remove to a 14"×11"×2" dish. Add oil and pepper flakes. Cook, uncovered, at 100% for 3 minutes.
  2. Remove from oven. Stir in remaining ingredients. Cook, uncovered, at 100% for 15 minutes, stirring 4 to 5 times.
  3. Remove from oven. Stir and serve hot or cold.
