The secret to making this a low-fat dressing is using the water in place of most of the oil. Only 18 calories in one tablespoon.
Ingredients
- 1/4 cup water
- 3 tablespoons lemon juice fresh, to taste
- 1/2 teaspoon sugar
- 1 tablespoon olive oil extra virgin
- 2 teaspoons digon mustard
- salt to taste
- pepper freshly ground, to taste
- 1 clove garlic small, smashed and peeled
Servings: makes about ½ cup
Instructions
- Combine all of the ingredients in a bowl and mix until well blended. Adjust the seasoning, transfer to a jar if desired, cover, and refrigerate.
- Whisk or shake before serving. ( You need not remove and discard the garlic, but it is used only to flavor the dressing: it should not be consumed.)
