Apple Skillet Cake

There are foods that appear at the Jewish holidays that I crave all year, including brisket and latkes. Now I’m adding to the list Martha Stewart’s easy apple cake made in a skillet, and it is to die for. You could certainly make this with a variety of colorful fruits, though apples are especially good this time of year.

Ingredients
  • 3 eggs `large
  • 1 cup milk low-fat
  • 1/2 cup all-purpose flour
  • 1¼ teaspoons salt coarse
  • 2 tablespoons butter unsalted
  • 3 apples sweet (such as McIntosh) peeled, cored, and cut into 1/4-inch slices
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 2 teaspoons sugar raw
  • 1/2 cup Greek yogurt low-fat plain, for serving (optional)

Instructions
  1. Preheat oven to 425 degrees. In a bowl, whisk together eggs, milk, flour, and salt; set aside. In a large ovenproof skillet, melt butter over medium heat. Cook apple slices, stirring occasionally, until soft, 6 to 8 minutes. Add brown sugar and cinnamon and cook until caramelized, 2 to 3 minutes.
  2. Pour in batter and transfer to oven. Bake until cake puffs, about 12 minutes. Sprinkle with raw sugar and return to oven until brown on top, 2 to 3 minutes. Let cool slightly. Serve each slice with a dollop of Greek yogurt, if using.

    This did not resemble “cake” inany way. Much more like a frittata. I would not make it again.

      When I made this cake, Aurelle, it was like a “crostata,” which is more a free-form tart than a cake, so I agree about the naming here. (We have no control over its name.) Having said that, we ate every bite and found it delicious. So sorry you were displeased, however; our game is to offer things that will make you happy. Best, Faith.

    I wanted something to put on the table for our Christmas dinner that would offer a symbolic nod to my fathers spiritual heritage. I heard this being described on the Food Smooze program, found the recipe online, and followed it to the “T”. Result, everyone loved it! Thank you Martha and Faith!
