This is a really good salad for a potluck. The fresh ingredients make this a perfect summer dish and it pairs well with so many grilled foods.

Ingredients
  • 8 cups corn fresh kernels, about 12 ears
  • 2 cups tomato 1/2 inch diced
  • 1 cup red onion diced small
  • 1/2 cup cilantro fresh, chopped
  • 1/2 cup vinegar red wine
  • 1/4 cup olive oil extra virgin
  • salt to taste
  • pepper to taste
Servings: about 3 quarts
Instructions
  1. Cut kernels off the cob and place in a large mixing bowl. Add the diced tomato, red onion, cilantro and mix well. Add the vinegar, oil, , salt and pepper and let sit for 5-7 minutes. Taste and adjust seasonings with salt and pepper.

    What a great way to use up leftover cooked corn! Awesome with grilled pork chops!
