Quinoa Salad

quinoa saladQuinoa is high in protein and easy to make. We like this salad as a side dish, but it also makes a great lunch.

Ingredients
  • 1 12-ounce box quinoa white
  • 1/2 cup olive oil
  • 3 lemons juice of
  • 3 tomatoes plum, diced small
  • 1/4 cup red onion minced
  • 1/4 cup parsley fresh, chopped
  • 2 teaspoons kosher salt
  • 4 dashes hot sauce
Servings: 2 quarts
Instructions
  1. Bring 3 quarts of water to a boil and add the quinoa. Let simmer for 10–12 minutes or until soft and seeds pop open. Strain into a fine mesh strainer. Mix in the olive oil and lemon juice. Then add the diced plum tomato, minced red onion, and chopped parsley. Mix well. Season with salt and hot sauce. Serve warm or cold
