This savory coffee glaze by Chris Prosperi certainly perked up a perfectly grilled steak during our pre-show meal. Coffee rubs for meat are ubiquitous on the web, but Chris found that really good coffee glazes for chicken, steak or pork are few and far between. This one is a purist’s version: it’s all about the coffee. But if you make this, and feel like experimenting, go ahead and do what Chris’s chefs suggested while looking over his shoulder—add some spice or herbs, perhaps some cream. . .whatever you think might enhance this “brew.”

Ingredients
- 2 cups beef broth
- 1/2 cup strong coffee
- 1 tablesppon Worcestershire sauce
- 1/4 cup maple syrup
- 3 tablespoons corn starch mixed with 3 tablespoons cold water
- salt and pepper to taste
- 2 tablespoons unsalted butter

Instructions
- In a sauce pot bring the beef broth, strong coffee, Worcestershire sauce, and maple syrup to a simmer over medium high heat. Slowly stir in the cornstarch water mixture while whisking. Season with the salt and pepper to taste. Then stir in the butter. Remove from the heat. Serve with grilled steaks.
