Ingredients
  • 1 tablespoon olive oil
  • 1-1/2 cups finely diced onions
  • 5 cloves garlic minced
  • 1 cup diced Granny Smith apple
  • 1/2 teaspoon dried thyme leaves
  • 2 pounds ground turkey
  • 1/2 cup chopped fresh parsley
  • 1/2 cup light cream or half-and-half
  • 1/4 cup ketchup
  • 2 teaspoons gluten-free Worcestershire sauce
  • 2 eggs
  • 1-1/2 cups gluten-free Italian-seasoned bread crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup apple smoked barbecue sauce

Instructions
  1. Preheat the oven to 350°F and grease a 9 by 5-inch loaf pan.
  2. In a sauté pan over medium-high heat, heat the olive oil. Add the onions and garlic and cook, stirring, for 4 to 5 minutes, until tender. Add the apple and thyme and cook for another 2 minutes. Remove from the heat and set aside.
  3. In a large bowl, use your hands to mix together the turkey, parsley, cream, ketchup, Worcestershire sauce, eggs, bread crumbs, salt, pepper, and apple mixture.
  4. Pack into a loaf pan, brush the barbecue sauce over the top, and bake for 45 to 50 minutes, until the internal temperature reads 165°F on an instant-read thermometer. Let rest for 10 minutes before slicing and serving.
Recipe Notes

Chef’s note: If you can’t find apple smoked barbecue sauce, substitute your favorite barbecue sauce.
